Antioxidants are substances which, when present in small amounts relative to the substrate susceptible to oxidation (lipids, proteins, carbohydrates, DNA), inhibit or completely prevent their oxidation. Polyphenolic compounds are, together with alpha-tocopherol and beta-carotene, a group of non-enzymatic antioxidants.
